Dinner: Asian Stir-Fry with Tofu
Dinner - Asian Stir-Fry with Tofu Ingredients:
1 cup firm tofu, cubed
1 cup broccoli florets
1 carrot, thinly sliced
1 bell pepper, sliced
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp grated ginger
2 garlic cloves, minced
Green onions, sliced (for garnish)
Sesame seeds (for garnish)
Cauliflower rice (store-bought or homemade)
Instructions:
In a wok or large pan, heat sesame oil and sauté garlic and ginger until fragrant.
Add tofu and stir-fry for 3-4 minutes until lightly browned.
Add broccoli, carrot, and bell pepper. Continue stir-frying until the vegetables are tender-crisp.
Pour soy sauce over the stir-fry and cook for another minute.
Serve the stir-fry over cauliflower rice and garnish with sliced green onions and sesame seeds.
