Dinner - Shrimp Zoodles Stir-Fry Ingredients:
1 cup shrimp, peeled and deveined
2 zucchinis, spiralized into zoodles
1 cup cherry tomatoes, halved
2 tbsp olive oil
2 garlic cloves, minced
1 tsp Italian seasoning
Red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Instructions:
In a pan, heat olive oil and sauté garlic until fragrant.
Add shrimp and cook until they turn pink.
Add zucchini noodles and cherry tomatoes, then stir-fry for a few minutes until the zoodles are tender.
Season with Italian seasoning and red pepper flakes (if using).
Garnish with fresh parsley.
