Dinner - Shrimp Zoodles Stir-Fry Ingredients:

  • 1 cup shrimp, peeled and deveined

  • 2 zucchinis, spiralized into zoodles

  • 1 cup cherry tomatoes, halved

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tsp Italian seasoning

  • Red pepper flakes (optional)

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a pan, heat olive oil and sauté garlic until fragrant.

  2. Add shrimp and cook until they turn pink.

  3. Add zucchini noodles and cherry tomatoes, then stir-fry for a few minutes until the zoodles are tender.

  4. Season with Italian seasoning and red pepper flakes (if using).
