Lunch - Quinoa and Roasted Vegetable Bowl Ingredients:

  • 1/2 cup cooked quinoa

  • 1 cup mixed roasted vegetables (zucchini, bell peppers, cherry tomatoes, etc.)

  • 2 tbsp hummus

  • Fresh basil, chopped

  • Salt and pepper to taste

Instructions:

  1. Cook quinoa according to package instructions.

  2. Roast the vegetables in the oven at 400°F (200°C) for about 15 minutes.

  3. In a bowl, layer quinoa, roasted vegetables, and hummus.

  4. Top with fresh basil, salt, and pepper.
