Lunch - Quinoa and Roasted Vegetable Bowl Ingredients:
1/2 cup cooked quinoa
1 cup mixed roasted vegetables (zucchini, bell peppers, cherry tomatoes, etc.)
2 tbsp hummus
Fresh basil, chopped
Salt and pepper to taste
Instructions:
