Dinner: Veggie Stir-Fry with Tofu
Dinner - Veggie Stir-Fry with Tofu Ingredients:
1 cup firm tofu, cubed
1 cup mixed stir-fry vegetables (broccoli, bell peppers, snap peas, etc.)
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp grated ginger
2 garlic cloves, minced
Green onions, sliced (for garnish)
Cauliflower rice (store-bought or homemade)
Instructions:
In a wok or large pan, heat sesame oil and sauté garlic and ginger until fragrant.
Add tofu and stir-fry for 3-4 minutes until lightly browned.
Add mixed stir-fry vegetables and continue stir-frying until they are tender-crisp.
Pour soy sauce over the stir-fry and cook for another minute.
Serve the stir-fry over cauliflower rice and garnish with sliced green onions.
