Dinner: Veggie Stir-Fry with Tofu

Dinner - Veggie Stir-Fry with Tofu Ingredients:

  • 1 cup firm tofu, cubed

  • 1 cup mixed stir-fry vegetables (broccoli, bell peppers, snap peas, etc.)

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tsp grated ginger

  • 2 garlic cloves, minced

  • Green onions, sliced (for garnish)

  • Cauliflower rice (store-bought or homemade)

Instructions:

  1. In a wok or large pan, heat sesame oil and sauté garlic and ginger until fragrant.

  2. Add tofu and stir-fry for 3-4 minutes until lightly browned.

  3. Add mixed stir-fry vegetables and continue stir-frying until they are tender-crisp.

  4. Pour soy sauce over the stir-fry and cook for another minute.

  5. Serve the stir-fry over cauliflower rice and garnish with sliced green onions.
