Lunch: Greek Chickpea Salad
Greek Chickpea Salad Ingredients:
1 cup canned chickpeas, drained and rinsed
1 cucumber, diced
1 tomato, diced
1/4 red onion, thinly sliced
1/4 cup feta cheese, crumbled
2 tbsp olive oil
1 tbsp lemon juice
Fresh parsley, chopped
Salt and pepper to taste
Instructions:
In a large bowl, combine chickpeas, cucumber, tomato, red onion, and feta cheese.
Drizzle olive oil and lemon juice over the salad.
Add chopped parsley, salt, and pepper.
Toss everything together.
