Lunch: Greek Chickpea Salad

Greek Chickpea Salad Ingredients:

  • 1 cup canned chickpeas, drained and rinsed

  • 1 cucumber, diced

  • 1 tomato, diced

  • 1/4 red onion, thinly sliced

  • 1/4 cup feta cheese, crumbled

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • Fresh parsley, chopped

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine chickpeas, cucumber, tomato, red onion, and feta cheese.

  2. Drizzle olive oil and lemon juice over the salad.

  3. Add chopped parsley, salt, and pepper.

  4. Toss everything together.
