1 cup cauliflower rice (store-bought or homemade)
1/2 cup black beans, drained and rinsed
1/2 cup diced avocado
1/4 cup diced red onion
1/4 cup chopped cilantro
1 lime, juiced
1 tbsp olive oil
Salt and pepper to taste
Instructions:
